Caramel Mousse Desserts with Wafer Crunch

Four individual mousse desserts, each one silky caramel over a wafer crumb that stays crisp underneath. Individually portioned, which is the point: everybody gets their own and nobody has to divide anything.

What it tastes like

Caramel rather than toffee, so it is buttery instead of merely sweet, and the wafer crumb gives the whole thing something to push against. Without the crunch it would be too smooth to hold your attention for a whole portion. With it, it works.
