Madagascan Vanilla Choux

Choux buns filled with Madagascan vanilla cream, finished with a craquelin top so they crackle rather than go soft. Vanilla is the whole point here, which means the difference between real Madagascan vanilla and essence is not a detail you can get away with hiding.

What makes them work

When to order them

They are the easiest thing here to hand round at a party, since nobody needs a plate or a fork. They are also considerably better eaten within a few hours of arriving, so order them for the day rather than the day before.
