Description
Carrot cake done properly, which mostly means resisting the urge to make it sweet. Spiced sponge, plenty of grated carrot so the crumb stays damp, walnuts through the layers and a cream cheese frosting that stays tangy. The finished cake is 18 cm and weighs around 1.7 kg, which is a good deal denser than the average sponge and is exactly why it slices so well.
What goes into it
- Warm spice, kept restrained enough that you can still taste the carrot
- Walnuts, for the texture as much as the flavour
- Cream cheese frosting rather than buttercream, so it finishes clean
