Kyiv Cake (18 cm)

Kyiv cake, which you will also see written as Kiev cake, is one of the great Eastern European celebration cakes and quite unlike anything in the French tradition. Two crisp nut meringue layers are set against soft sponge and buttercream, so every forkful has crunch, cream and chew in it at once. It was created in Kyiv in the 1950s and has been a birthday cake across the region ever since.

What is in it

• Meringue layers baked with hazelnuts until they crack rather than chew
• Buttercream between the layers, and a light chocolate note running through it
• A finish that stays quite plain, because the inside is doing the work

Ordering

The cake is 18 cm and can be written on in chocolate or finished with flowers for a birthday. The meringue layers have to be baked well ahead and dried properly, so we ask for at least 48 hours notice and prefer more.
