Prague Cake (18cm)

Prague cake, or Praga, is the Soviet answer to the Sachertorte and, for a lot of people, the better one. Dark chocolate sponge is layered with chocolate cream, brushed with apricot, and finished under a glossy ganache. It was developed at a Moscow restaurant rather than in Prague, which is one of those facts that surprises everybody who grew up eating it.

What it tastes like

Deeply chocolate but not cloying, because the apricot cuts straight through the middle of it. The sponge is soaked rather than dry, and the ganache sets to a clean shine, so it slices well and holds its shape on the plate. It is a good choice for a table that includes people who claim not to like cake.

Ordering

The cake is 18 cm. Add a chocolate message, candles or fresh flowers at checkout. As with everything here it is baked for your delivery date, so we ask for at least 48 hours notice.
