Honey Cake

Medovik, the Russian honey cake, is the cake Mike is asked for more than any other. Thin layers of honey sponge are baked one at a time, stacked with a light sour cream frosting, and then left to rest overnight so the layers soften and the whole thing settles into something closer to a torte than a sponge cake. It is delicate rather than heavy, and much less sweet than most people expect a honey cake to be.

What makes a medovik

• Honey worked into the dough while it is still warm, which is where the colour and the caramel note come from
• Layers rolled thin and baked separately, then trimmed and stacked
• Sour cream frosting between every layer rather than buttercream, which is what keeps it light
• An overnight rest, the one step that cannot be hurried

Ordering a honey cake in London

The cake is 18 cm and comes plain, finished with fresh flowers, decorated with berries, or written on in chocolate if it is for a birthday. Everything is baked to your delivery date rather than taken off a shelf, so we ask for at least 48 hours notice.
