Charodeyka, which translates as the Enchantress, is one of the great Soviet cakes and one of the simplest: airy sponge, a soft custard cream, and a chocolate glaze poured over the top so it sets to a mirror. It was a staple of Soviet bakeries from the 1970s onwards and remains the cake a lot of people mean when they say they want something from childhood.
Much lighter than it looks. The sponge is soft rather than dense, the custard cream is barely sweet, and the glaze does most of the talking. Anyone expecting a heavy chocolate cake will be surprised by how easily it goes.
Add candles or a chocolate message at checkout if it is for a birthday. At least 48 hours notice, because the glaze is poured on the day and needs time to set properly.
