Product information

Description

Shokupan, the Japanese milk loaf, made with the tangzhong method: part of the flour is cooked into a paste before it goes into the dough, which lets the bread hold far more water than an ordinary loaf. The result is a crumb that pulls apart in strands and stays soft for days.

What it is good for

  • Toast, where it browns beautifully and stays soft inside
  • Sandwiches, especially the very thin crusted kind
  • Eating warm, torn, with butter, which is what usually happens

Weekly bread

The Japanese loaf is part of the weekly bread round to Virginia Water, Weybridge, Egham and Ascot every Wednesday.
