Description

Ten thin Russian pancakes, made to order. Blini are not the thick American pancake and not quite the French crêpe either: thinner than one, softer than the other, and built to be rolled or folded around something.

How to serve them

  • Sweet, with honey, jam, condensed milk or sour cream
  • Savoury, with smoked salmon, caviar or soured cream and dill
  • Warmed briefly in a dry pan, which is all they need

When people order them

Maslenitsa, the pancake week before Lent, is the traditional moment and the busiest one here. The rest of the year they turn up at brunches and at the start of dinners.

Ordering

Ten to an order. At least 48 hours notice. Made by hand in Belgravia and delivered across London and Surrey.
