Description
The Basque burnt cheesecake is the one with no crust, baked hot and fast so the top scorches and the centre stays molten. It came out of San Sebastián and has spent the last few years quietly replacing the New York cheesecake on menus everywhere, largely because it is better.
What makes it different
- No base, no biscuit, nothing to go soggy
- Baked at high heat so the top caramelises and cracks
- A centre that stays soft and almost pourable at room temperature
- Real vanilla rather than essence
Serve it at room temperature rather than fridge cold. It is worth taking it out an hour before, and it does not need cream.
Ordering
The cheesecake is 18 cm. At least 48 hours notice, since it is baked to your delivery date. Made by hand in our Belgravia kitchen and delivered across London and Surrey.
